  • Ham: From Frozen Solid to the Table in 3 Hours

    This ham was in the freezer for awhile. Every time I thought about cooking it, I thought of the hours of thawing it in the fridge and how to cook it. After all that thought, my motivation vanished and it stayed in the freezer.

    This past weekend, I made the decision to throw all caution to the wind and just cook it…frozen…I took that sucker out of the plastic wrap, threw it on a pan, and stuck it in the oven at 325 degrees for about 2 hours 45 minutes. It was perfect! No water, no seasoning, nothing. Just sollidly frozen ham in the pan. I did cover it with aluminum foil. I didn’t even check on it while it was cooking. It was delicious! This will probably be my go-to ham cooking way from now on.

  • Quick & Easy Naan Flatbread

    I didn’t measure anything. Just put the amount that looks good to you. This flatbread is delicious as is, but I think next time I make it I might drizzle a little Balsamic vinegar on it. You could even add a few spring greens on top and then add the Balsamic vinegar.

    Ingredients

    • Naan, 1
    • Brie
    • Walnuts
    • Dried cherries
    • Honey

    Directions

    1. Sprinkle with desired amount of Brie, walnuts, and dried cherries on naan.
    2. Drizzle with honey.
    3. Cook in preheated 350 degree oven for 10 minutes.
  • Oven Cheesy Chicken Ramen

    This recipe is similar to Oven Ramen Spaghetti & Chicken, except it has Ragu cheese sauce instead of spaghetti sauce.

    Oven Cheesy Chicken Ramen

    Ingredients

    • 1-1/2 lbs Frozen chicken thighs
    • Ramen noodles without seasoning packet – 2 packages
    • Ragu Cheese Sauce – 1 jar
    • Water – 3/4 sauce jar

    Directions

    1. Put frozen chicken thighs in Dutch oven.
    2. Top with ramen noodles. Don’t use seasoning package.
    3. Add cheese sauce.
    4. Add 3/4 cheese sauce jar filled with water.
    5. Baked for 2 hours at 350 degrees with lid on the Dutch oven.
  • Easy Gumbo

    Ingredients

    • 1 Sausage link of your choice, cut into slices
    • Salsa, 1 jar of your favorite – I use Mrs. Renfro’s Peach Salsa
    • Frozen gumbo veggies

    Directions

    1. Put sausage pieces into Dutch oven.
    2. Add entire jar of salsa.
    3. Add frozen gumbo veggies.
    4. Cook in 350 degree oven for 2 hours.

  • Oven Ramen Spaghetti and Chicken

    This Oven Ramen Spaghetti with Chicken is a wonderful comfort dish. It hits the spot any time. It’s one of my family’s favorites.

    Ingredients

    • Frozen chicken thighs or breasts
    • Ragu sauce, 1 jar of your choice
    • Jar of water
    • Ramen noodles, 2 packages
    • Parmesan cheese to taste

    Directions

    1. Cover bottom of Dutch oven with frozen chicken pieces.
    2. Add two packages of ramen noodles with the seasoning packets removed. We won’t be using those. Break the noodle block in half.
    3. Pour jar of Ragu over the top.
    4. Fill up jar with water and add to the pot.
    5. Cook in 350 degree oven for two hours.
    6. Serve with Parmesan cheese to taste.
  • Oven Salisbury Steak with Carrots and Potatoes

    Last night, I cooked Salisbury steak in the oven.

    Don’t judge me too harshly, but I have a comfy loveseat in the kitchen next to a glass door that leads to a patio. I like to stick an easy one-pot dinner into the oven and then sit and look out the door at the beautiful canna lillies my late-ex-husband planted in the backyard. Today is the sixth anniversary of his death, so he’s on my mind more than usual this morning.

    Anyway, back to the recipe.

    Salisbury Steak with Carrots and Potatoes

    Ingredients

    • 4 Hamburger patties
    • Beef gravy mix packet – I use Pioneer or McCormick
    • Frozen pearl onions
    • Frozen carrots, 1 bag
    • Frozen Ore-Ida Homestyle Steam ‘n Mash potatoes, one bag

    Directions

    1. Place hamburger patties into Dutch oven.
    2. Top with gravy mixed with water according to package.
    3. Add pearl onions – however many you want.
    4. Add bag of frozen potatoes.
    5. Add bag of frozen carrots.
    6. Put lid on Dutch oven and cook in 350 degree oven for 2 hours.
  • Two-Ingredient Crockpot Chicken and Salsa

    As you’ve seen with my other recipes, I like to eat good food but I don’t want to spend much time cooking. This is an amazing recipe that I thought would just be “a meal,” but I was surprised to find it’s an “amazing meal.”

    Slow Cooker Chicken & Salsa

    Ingredients

    • Chicken thighs or breasts – I use frozen
    • Salsa, 1 jar of your favorite – I use Mrs. Renfro’s Peach Salsa

    Directions

    1. Put frozen chicken pieces into the crockpot.
    2. Add entire jar of salsa.
    3. Cook on high four hours.
    4. Shred chicken.
    5. Pile it onto a hot tortilla and add cheese, cilantro, and anything else you like.

    Notes: I’ve also cooked pork like this.

    This dish is delicious with a side of rice and beans.

  • Turmeric Chicken with Potatoes and Green Beans

    Turmeric chicken is something I had no idea I needed in my life until this week. I heard turmeric was good for inflammation. It’s not something I’ve ever included in my diet other than the occasional restaurant meal. I wasn’t even sure I would like it. I’ve been working on a Daily Om course that teaches how to decrease inflammation with foods. They suggested three daily drinks, two of them with turmeric. Oh my goodness…the drinks were nasty. This pure nastiness made me decide to eat the turmeric instead of drinking it.

    I came up with this recipe, and let me tell you it’s one of the best meals I’ve ever had…and I had it again the next day.

    I must warn you that everything I cook is fast, easy, and generally has as few ingredients as possible. I do a lot of oven meals using frozen ingredients that I don’t thaw ahead of time. I like meals that I can put in a low-heat oven and cook a couple of hours. Of course, you can use foods that are not frozen and drastically reduce the oven time.

    I was gifted a beautiful Le Creuset Dutch oven by my employer, but they are super expensive and any Dutch oven will work fine.

    Turmeric Chicken with Potatoes and Green Beans

    Ingredients

    • 1-1/2 lbs chicken thighs or breasts, frozen
    • 4 tsp cumin
    • 2 tsp sea salt
    • 2-1/2 tsp turmeric
    • 1-1/4 tsp garlic powder
    • 1 tsp ground ginger
    • 1/2 tsp black pepper
    • 1 T olive oil or avocado oil
    • 1 pkg Ore-Ida Steam and Mash potatoes, frozen
    • 1 pkg of green beans, frozen
    • Fresh lemon juice to taste

    Directions

    1. Mix all the pieces together in a small bowl.
    2. Add olive oil to a Dutch oven pan and add frozen chicken pieces.
    3. Sprinkle spices over the chicken. Even though it looks like a lot, use all of it.
    4. Top with the whole bag of frozen potatoes.
    5. Top with the whole bag of frozen green beans.
    6. Put the lid on the pan and bake for 2 hours at 350 degrees. You don’t need to add liquid because the moisture from the frozen foods is enough.
