Slow Cooker Mexican Style Pork Chops

If you like food with a Mexican flair as much as my family does, you will love these pork chops. We ate the pork chops up so fast that I forgot to take a picture, so I borrowed the one above until the next time I make them as these look similar.

Ingredients

  • 6 pork chops
  • 1 can hominy, drained
  • 1 can red enchilada sauce
  • 8 oz salsa – my favorite is On The Border salsa
  • 1 can green chilis
  • 1 can cream of chicken soup

Directions

  1. Put everything in crockpot and cook on low for 4 hours.
  2. I like to serve with a side Uncle Ben’s Spanish Style Ready Rice, refried beans, and tortillas, with cheese of course.

Slow Cooker Cheesy Scalloped Chicken

Cheesy Scalloped Chicken

Ingredients

  • 1 box (4.7 oz) scalloped potatoes
  • 1 can (10 oz) chicken
  • 2 cups water
  • 1 cup (or more) mozzarella
  • Black pepper, to taste

Directions

  1. Add potatoes to slow cooker.
  2. Add chicken.
  3. Top with seasoning package.
  4. Add 2 cups water.
  5. Cook on high for 2 hours or low for 4-5 hours.
  6. In the last 15-30 minutes, top with cheese and black pepper.

Slow Cooker Pineapple Chicken

The steam from this wonderful dish fogged up my camera lens, so my picture is a bit off. This is a delicious and easy meal, but it looks and tastes fancy.

Slow Cooker Chicken with Pineapple

Ingredients

  • 6 chicken tenderloin strips
  • pepper to taste
  • paprika to taste
  • 1 20-oz can of crushed or chunked pineapple, drained
  • 2 Tablespoons dijon mustard – I used Grey Poupon
  • 2-1/2 Tablespoons soy sauce
  • 4 cloves garlic, minced
  • Toss everything in the slow cooker, and cook on high for 4 hours.
  • I served this with a side of Uncle Ben’s Ready Rice jasmine rice and steam-in-bag peas.

Slow Cooker Shepherd’s Pie

Ingredients

  • 1 lb ground beef
  • 1 can green beans, drained
  • 1 can whole kernel corn, drained
  • 1 can tomato soup
  • 1/2 tsp dried basil
  • 2 cups prepared mashed potatoes
  • 2 cups cheddar cheese

Directions

  1. Mix together everything, except the mashed potatoes and cheese, and spread into slow cooker.
  2. Top with the prepared mash potatoes.
  3. Cook on low for 4-5 hours.
  4. An hour before done, top with cheese and continue cooking.

Slow Cooker Lasagna

This lasagna is another recipe I cooked in my new Cuisinart MSC-800 Cook Central 4-in-1 Multi-Cooker, 7 quart. It was delicious. My daughter and I ate dinner twice, and I had two lunches from this recipe. It makes a good bit. It’s easy and delicious – even better the second day.

Slow Cooker Lasagna

Ingredients

  • 12 lasagna noodles
  • 1 pound ground beef
  • 1 teaspoon Italian seasoning
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 28-oz jar spaghetti sauce of your choice – I like Ragu, but any kind will work
  • 1/4 cup water
  • 16 oz cottage cheese
  • 2 cups shredded mozzarella cheese

Directions

  1. Brown and drain ground beef. My Cuisinart MSC-800 Cook Central 4-in-1 Multi-Cooker, 7 quart has a browning feature, so I brown mine right in the slow cooker.
  2. Break lasagna noodles in half and place half of them on the bottom of the slow cooker.
  3. Stir onion powder, garlic powder, and Italian seasoning into the ground beef.
  4. Pour half of the ground beef onto the noodles in the slow cooker.
  5. Layer half the sauce and water, followed by half of the cottage cheese and mozzarella cheese.
  6. Repeat layers.
  7. Put lid on slow cooker and cook for 4-5 hours on low heat. Do not cook for more than 5 hours.

Ingredients

  • 16 oz canned biscuits – 1 16 oz can or 2 8 oz cans
  • 1/2 cup brown sugar
  • 1/2 tsp cinnamon
  • 4 Tablespoons butter

Directions

  1. Melt butter. My new slow cooker has a saute feature, so I just melted the butter right in there.
  2. Mix brown sugar and cinnamon.
  3. Dip biscuit in butter and then in cinnamon and sugar mixture, and add to slow cooker.
  4. Cook on low for 3 hours.

    Note: Next time, I might cut the biscuits into quarters. They were delicious whole, but they might be even more delicious in smaller pieces.
